Saturday Morning Muffins

Saturday morning usually means eggs, home fries, and bacon (if we’re feeling frisky). Today, however, we didn't really make it past the bacon step. I realized that 4 strips of bacon each doesn't exactly make for a filling breakfast, so I decided to make some yummy muffins. I found this recipe for cinnamon toast muffins, but since we already had the bacon going, I figured why not do a bacon variation!

I tried to do substitutions in the recipe whenever I could to make it a bit healthier (I’m using that term loosely considering there is bacon involved here), so I didn't even end up using the refined sugar. The end result was fantastic! You’ll need:
1 cup all-purpose flour
1 cup raw oats (throw in a blender or food processor to make a fine powder)
4 teaspoons baking powder
1/2 teaspoon kosher salt
1 tablespoon cinnamon (plus more for topping)
1/4 cup brown sugar (plus more for topping)
2 tablespoons maple syrup
1/4 cup oil
1/4 cup bacon fat
2 eggs
1 cup milk
4 strips bacon chopped up (for topping)

First step is to preheat the oven to 375 F and start frying some bacon!

Next combine all the dry ingredients and mix well. Add the milk, eggs, oil, and bacon fat. mix until just comined then add the maple syrup.

Line your muffin tin with cupcake liners and fill them 3/4 full. Top with a sprinkle of cinnamon and brown sugar, then top each muffin with your bacon bits.

Bake for 15-18 minutes, until an inserted knife comes out clean.

Have your friends marvel at your baking prowess (and ask them to help you eat the end result), and enjoy! These were seriously delicious, I had to contain myself from eating them as soon as the came out of the oven…and then I ate two as soon as they were cool, oops!

  2. Woah!! I've never tried these but I have heard of bacon cupcakes and such! I don't know how the combination would taste?!!? I'll definitely have to try it ASAP!!!! :)

    1. Yeah, I've had a chocolate bacon cupcake before and it was surprisingly good! But I love these muffins, they taste like pancakes with a side of bacon :)

  5. I just so happened to stumble across your blog and I love it! You have me wanting to go to Philadelphia for the first time ... ever... also these look incredible. Good call on the bacon!
